An Italian kinda night

Hello ladies! 

It's the first night after classes and after sitting in on a six hour med surg lecture, I am so glad Liz decided to cook tonight. Chicken Parmesan with white cheese Mac shells and some white wine. Spud fancy for college? Not at all.Someone once told me that it's a kind of lifestyle choice we make here at Notre Dame to be professionals ready to take on the world. But at the end of the day, it's also nice to kick off the shoes and relax in sweatpants. "Grungy clothes" or not, we like our comfort in style :)

On the eve of the spring semester

T'was the night before spring classes and all through the halls, the non nursing students greeted each other with glee while nursing students buried their noses in textbooks and crammed for last minute homework!


I cannot believe that's tomorrow. Back to classes and clinicals and no sleep. 

In honor of the last day of break, Liz and I have been flooding this past weekend. Last night I had a craving for coffee that sent us out at midnight only to find ourselves searching for an open diner after some thought because Liz and I were craving it. Then today I decided to do a dry run of my route to clinical and we ended up at a local restaurant that specializes in Irish cuisine. Here is the result:



Calamari for me and chicken noodle soup for Liz.


Followed by a Maryland crab bread bowl dip! (Yes I was quite in the seafood mood)


And creme brûlée for dessert for me.


And a peanut utter cheesecake slice for Liz.

It's been snowing on and off all afternoon and when we got back to campus, I couldn't resist the opportunity to do this:

Once upon a cold winter's night

Let's be honest: Good food is hard to come by and when it's cold, we just crave the rich smell of warm food. Lets just say I got inspired...or bored... this week on campus what with all the snow. Anyway, I am making good use of my mini crock pot that I got for Christmas. Tonight I'm getting creative and bought raw food to cook (okay you're probably like "Anna of course it's raw hence you cook it..." Hear me out, I've just been using this wonderful machine to warm up store bought soup...). Right now it's a mix of chicken, garlic, onions, rosemary, thyme, oregano, olive oil, Riesling, chicken broth...just repeating the list is making me über excited to see how this turns out. 

Although we have really flexible meal plans on campus, college is a place to learn how to survive in the real world. That and sometimes all you want is to walk in your room and it smell like home. (Okay thats a little odd I admit lol) Cooking is one of the fun experiments we have to encounter in college. As I keep bemoaning to Liz, I'm actually starting to become an adult haha! I want knife sets, cutting board, oven mitts...wow maybe I am getting old!

Anyway, this is my winterim adventure. On a college student's budget, this is my lunch and dinner tomorrow so wish me luck on the taste!

Let the experimentation begin!

Snowy start to the new semester

Hello ladies!

While the first day of school is not until next Monday, we nurses were supposed to start with a dosage exam this morning. Something we need to take and pass before every start of the semester to prove we can properly calculate medications for our patients. Because of the snow day, our test got postponed. 

Yaaaay! One more day to study! It turned to be adventure time. Liz, and a friend of ours, Laura, decided to go out and get warm food and drinks this morning before the snow got really bad. Then we spent the day cat napping and fooding. Talk about a perfect lazy day :)

Happy 2014 and first day of winterim classes!

Hello ladies! This winterim, the 6 weeks between fall and spring semester, I have decided to catch up on my honors classes and take "The Science of Science Fiction" no, I'm not a huge sci fi fan but I do enjoy science. On our first day we got to see the planetarium. (Yep this was the highlight of my day!) I wanted to sit there forever but alas, life had to continue. After watching what the sky would look like tonight (there are some shooting stars tonight roughly 3am-5am apparently), zooming in on planets, galaxies, and constellations, I can honestly say this is going to be a great class.
